3. Parra Jimenez and Innana cheeses
The Parra brothers have been dedicated to organic production since 1993 when they started making their wines. And since 2010 they have been dedicated to making organic sheep cheese. Their commitment to native sheep breeds has led them to be certified as the first Manchego cheese with Demeter certification under the principles of biodynamic agriculture and livestock.
The peculiarity of Innana is that it is a cheese cured in wine. The cheeses are immersed in a wine bath for several hours until they acquire their characteristic color. So it won another of our well-deserved Super Gold at the World Cheese Awards. Another must-try that you can't stop trying.
